There are some really good pure dex weapons. Godskin peeler for one is amazing, or running a sword and shield combo focusing on parry/reposte. My favorite was a pure Faith build. No weapons really, just incantations. Dumped everything into faith so it was a real glass cannon, but so fun to just melt enemies and narrowly avoid death.
